I was served Rebel Recipe Niki´s Chocolate Avocado Truffles a few weeks ago and the taste of these truffles are out of this world. I just loved them so much I had to make them myself during Christmas. I didn’t have avocado, so I had to improvised and used banana instead. I have to admit it turned out amazing, and they were gone in seconds during my trial round this christmas, now Ive made them as treats for nights celebration. A clear hit among my family, so I wanted to share my version with you.

1 Ripe banana
100g Melted high-quality chocolate
2,5 tbsp melted Coconut Oil
2 tbsp Raw Cacao
Pinch Pink Himalaya Salt
Optional: 2 tbsp honey, maple syrup (For me the ripe bananas added enough sweetness)
1. Add the banana, cacao, (optional sweetener) and salt to your food processor or high-speed blender. Blitz until smooth and creamy.
2. Very gently melt coconut oil and chocolate in a pan and add to the processor. Pulse to combine everything.
3. Transfer to a bowl and let it cool in the fridge for a couple of hours, to firm up so that you can roll them easier.
4. Scoop out the bite-size pieces of the mix and roll into balls and then roll in some more cacao.
5. Store in the fridge.
