I posted on my instagram story a few days back - my mums delicious Carrot, Ginger & Orange Soup, and since so many of you have asked for the recipe - here it is :)
I've used my Kuvings Cold Press Juicer to make this soup. Makes the recipe so simple and you make the most out of the nutrition in the vegetables.
Ingredients serves 3-4 portions
2 garlic cloves
½ red chili
1. Wash ingredients well.
2. Peel the union, garlic, and orange.
3. Cut ingredients as needed to fit the chute.
4. Juice ingredients in the Kuvings Whole Slow Juicer alternating between the ingredients. (If you do not have a juicer, a blender can be used or you can make it the traditional way, but then you need to add water with organic vegetable stock)
5. In a pot, over medium heat, combine the pulp and the juice. Bring to a boil for about 20minutes to blend all the flavours.
Tips: You can add fresh herbs like coriander or basilicum to add some more flavour. If you want the soup to be more filling you can add some cooked quinoa/rice. For those of you who eat meat, you can add chrispy bacon or chorizo.
